FIRST THINGS FIRST…VISIT THE ORGANIC GARDEN AND GREENHOUSE….

WEEK ONE…DAY ONE OF THE 12 WEEK CERTIFICATE CLASS AND COMPOSTING IS WHERE IT ALL BEGINS FOR GOOD FOOD…

There is one common thread to life here and it starts with this quote, “Remember this is where it all starts, in the good earth, and if you don’t have clean fertile soil you wont have good food or pure water”   Ballymaloe Cookery Course, Darina Allen.

For me this is learning a new lifestyle that involves first COMPOSTING.  Then all of this lovely, very much alive compost goes onto everything here that is grown.  (The fields are fertilized with sea kelp that is gathered from the nearby sea when tide is out)  The food scraps from the kitchen and self catering cottages goes into “HEN BUCKETS” which are carried out to HEN’S BIN which is a very large waste container and this is the beginning of the composting process.  The hens climb into the HEN’S  BIN to get the food scraps and  leave their waste on the pile of food, where straw is added and that process continues until it is ready to be moved and added to the composting area!   Plus another added value is that the hens provide the kitchens with wonderful eggs!    There is almost no waste produced at the school.

IT IS JUST HARD TO DESCRIBE THE AMOUNT OF PRODUCE THAT IS GROWN HERE…TIMMY SHOWING US THEIR CROP OF BRUSSELL SPOUTS AND HOLDS FRESHLY PULLED CARROTS.
